Quick, one pot”English breakfast”

english-breakfastAs I’ve mentioned, now we have warm meal for dinner, but at lunchtime I still would like to eat something warm and filling not always sandwiches. Cooking twice per day would mean that the time I spend it the kitchen doubles and I really do not want that. The solution is either to cook more for dinner that I can have an extra portion next day, or as today, I can create something quickly from leftovers in the fridge.


Quick, one pot “English breakfast”

portion, 1 pot

Time needed: 10 minutes


  • leftover baked sausage and ham
  • 1 egg
  • 5 mushrooms
  • 2 tomatoes
  • 1 slice of bread
  • broccoli sprouts
  • oil, salt


Wash the vegetables, and half the tomatoes. Heat oil in a pan, put neatly everything into it, break egg and slip into the pan as well. After 3 minutes turn mushroom and tomato, salt your food and cook it slowly until egg is ready. Place your dish into a plate and roast a slice of bread in your pan that will soak the tasty oil left in the pan. I eat it with broccoli sprout but any salad is fine.
